educator needs help with Mindstorm EV3

I am teaching "robotics" at a small school and have some old and used mindstorm EV3 kits to use with them. We are done with the initial build and now its time to code. It seems there are many options for coding them..... mindstorm app, python, scratch....what should i use? I was going to start with the lego software/app but the website said it will only be available until july 2026 and I would like to repeat this next year. ANY advice on teaching with these is welcome. I am very new to this. ...
